Cajun Meatloaf


Cajun Meatloaf


1/2 Stick butter or margarine, melted
1 Cup yellow onion, chopped
1/2 Cup green pepper, chopped
2-3 cloves garlic. finely chopped
1 tsp cayenne pepper
1/2 tsp thyme
1 Tbsp ground pepper
1/2 Tbsp cumin
1 1/4 lbs ground chuck or ground turkey
1 egg, beaten
3/4 Cup quick-cooking oats
3/4 Cup Catsup
1-2 tsp Lea & Perrins
3/4 Cup sharp cheddar cheese, grated

Preheat oven to 375 degrees. In a skillet with butter, add next 7 ingredients, cook until vegetables are tender, stirring often. In a bowl, combine meat, egg, oats, 1/2 cup catsup, Lea & Perrins and cheese. Blend in vegetables. Form into a loaf in a 9 1/2 x 4 x 3 inch loaf pan. Bake for 20 minutes, spread top with quarter cup catsup, bake for 40-45 minutes more.

Giiiirl....I am SO making this this weekend. Meatloaf is MY thang, so I am ancy to try this one out. Sounds delish. But, what isn't what a half a stick of butter?
